TH NYC Restaurant 1, LLC dba Pinch Chinese Executive Chef in New York, New York
Executive Chef (New York, NY) Planning and creating menus and recipes for upscale predominantly Shanghai style restaurant; Ensuring that all menus are constantly updated with both traditional Shanghai dishes as well as new takes on classics including, but not limited to Peking Duck, Dim Sum, Chinese hot pot dishes, etc.; Incorporating Jiangxi-style and Sichuan style dishes into the menu; Identifying and hiring the best Chinese cuisine sous chefs from throughout the world; Training and managing full kitchen staff; Overseeing management of food and labor costs; Overseeing all inhouse procedures involving food purchasing and inventory; Overseeing kitchen operations and ensuring that high standards of hygiene, cleanliness and safety are maintained at all times; Cooperating with the floor management about menu knowledge, including tasting. Must have 5 years of experience in the job offered. Salary Offered: $90,605 - $90,705 per year.
