LOCATION/UNIT: Rich Lake Dining Center, Newcomb Campus, Newcomb, NY.

TITLE/SALARY GRADE: Cook, SG-11

DURATION: Temporary

SALARY: $21.53 per hour (note: current or reconstructed salary for state employees in accordance with NYS Audit and Control)

POSITION DESCRIPTION:

  • Prepare and cook a variety of meals for researchers, students, and other guests

  • Weigh and measure ingredients; prepare and cook various meat, fish, hot cereals, vegetables, soups, desserts and baked goods to include vegetarian and vegan options when necessary

  • Assign and provide direction to Food Service Workers in food preparation, production, scheduling, quality assurance and work training

  • Create weekly menus, event menus, and on-campus catering menus

  • Monitor and maintain food and supplies inventories; place and check in related orders

  • Assist in scheduling kitchen staff based on meal forecasts; schedule of maintenance and repairs of equipment; communications regarding general kitchen needs; receive emails; keep records; maintain recipe file and index

  • Maintain work and storage areas in a neat, clean and sanitary condition

  • Review with staff and adhere to proper NYS Health Department safety and sanitation standards

    Job Requirements:

QUALIFICATIONS: Three years of experience in large-scale cooking, serving 12-70; one year of which must have included regular supervision of subordinate employees.

OPERATIONAL NEEDS: 5:30am - 9:00am and 3:00pm - 7pm, Monday through Friday, workweek may change for special events; some weekends required. This is a full time position based on a 40 hour workweek April thru October, and part-time based on scheduled groups November thru March.

Job requirements include working knowledge of:

  • Recipes, methods and procedures used in preparing and cooking quantity foods

  • Sanitary requirements concerning food preparation, cooking, serving, and storage as issued by employing and regulating agencies

  • Operation, cleaning and care of utensils, equipment and kitchen areas; and common cleaning products for their safe and sanitary upkeep

  • Principles and practices of supervision

  • Common culinary mathematics and calculations including manipulations of recipes for quantity production, running food cost, menu and meal pricing, and portion control determinations

Ability to:

  • Understand and follow oral and written instructions

  • Use and manipulate kitchen equipment and utensils

  • Perceive differences in form, color and appearance of food to determine completion of cooking time, deterioration or contamination

  • Communicate instructions and advice effectively to and exchange information with food service workers

  • Supervise a small kitchen staff

Approval must be granted by Civil Service prior to filling this position pending clearance of re-deployment roster, transfer list, preferred list, reemployment roster, or placement roster.
