Assistant Executive Steward

SUMMARY

The Assistant Executive Steward will assist the Executive Steward and the Food & Beverage leadership team to ensure sanitation, cleanliness and organization of kitchen equipment, china, glassware and flatware. The focus of the role will be to assist in strategically managing the department daily operations to ensure Food & Beverage outlets have the necessary tools and equipment to provide flawless service to the guests. This role will contribute to the organization as an active business partner that is responsible for supporting the company's goals, objectives, vision, mission, and values.

ESSENTIAL FUNCTIONS

Major areas of responsibility/ management include, but are not limited to:

  • Primary responsibilities include assisting the Executive Steward in hiring, training and supervising the hotel’s Stewarding department. Evaluate performance; lend guidance, leadership, and discipline as needed with assistance from the Executive Steward.

  • Assist with inventory and storage of food and beverage equipment.

  • Ensure all ware washing equipment and equipment in the kitchen is clean and in proper working condition, review daily cleanliness practices with stewarding team and keep up with daily cleaning schedule.

  • Maintain cleanliness of all back of the house areas including kitchens and walk- ins.

  • Deliver food for banquet events and breakdown stations for the conclusion of the event.

  • Assist in spearheading and managing the kitchen recycling program; assist the Executive Steward and Executive Chef upon request with special projects and initiatives.

  • Schedule the department appropriately to ensure that proper coverage is maintained while maintaining payroll costs in line with forecast.

QUALIFICATIONS

  • Minimum of 3 years’ stewarding experience, with 2 years’ experience in a stewarding leadership role

  • Bilingual; Fluent, ability to speak, read, write and understand English and Spanish

  • Knowledge of housekeeping service techniques and cost controls such as manpower, productivity and other expenses

  • Intermediate skills with Microsoft Office products; Word, Excel, PowerPoint, Outlook

  • High School Diploma or equivalent

PHYSICAL REQUIREMENTS

Position requires walking and giving direction most of the working day; must be able to stand and exert well-paced mobility for up to 6 hours in length. Must be able to exert well-paced ability to maneuver between functions occurring simultaneously. Must be able to lift up to 50 lbs. on a regular and continuing basis. Must be able to walk, stand, sit, bend, stoop, squat, stretch and fulfill cleaning tasks occasionally. Must have finger dexterity to be able to operate office equipment. Temperature generally is moderate and controlled by hotel environmental systems; however, must be able to work in extreme temperatures like freezers (-10°F) and kitchens (+110°F), possibly for one hour or more. Must be able to push and pull carts and equipment weighing up to 200 lbs. occasionally. Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.

The pay scale* for Assistant Executive Steward is $75,000-$80,000.

*The pay scale is the base salary or hourly wage range, exclusive of incentive pay such as commissions, piece rates, gratuities, and the like, that Montage reasonably expects to pay for the position.
